Cold, creamy soft ice cream sandwiched between two cookies (or doughnuts, bread, macarons, waffles… you name it, it might be done) is fairly possibly one of the primary summer refreshments. With limitless flavor combinations, the possibilities are endless and frozen treats makers, pastry chefs and cooks across the nation are using their creative chops to come up with innovative, fun and above all tasty concoctions.

“I think what makes for 冰淇淋 is the mixture of textures and it’s fun because you realise it will get a little messy,” says Sam Mason of OddFellows Frozen Treats Co. in The Big Apple.

From classic vanilla soft ice cream amid chocolate chip cookies to warm brioche bread encasing cornbread ice cream and blueberry compote, there’s an soft ice cream sandwich to please everyone. And it’s a great summer treat.

“Ice cream sandwiches will be the perfect mix of soft ice cream and pastry,” says Ken El, co-owner of The Big Apple ice cream shop Ice & Vice. “You should use cookies, cakes, whatever you want really, and load it with toppings, while being perfectly on the go. It’s whimsical and really brings you returning to your childhood.”

Ice cream sandwiches also present an ideal potential for collaboration, with a lot of shops getting various areas of their sandwiches from neighboring businesses. By way of example, Ice & dexrpky27 often collaborates with Underwest Donuts, Daly Pie and Abigail’s Bakeshop on quirky creations, much like the Let’s 三明治冰餅, created using Daly Pie’s pie crust, filled with cardamom apple pie swirl ice cream and rolled in boozy candied pecan.

“We’re always working toward locating the perfect mix of flavors, texture and overall fun, where people can satisfy their dessert cravings and enjoying yourself while doing it,” says El.
